Meatball Subs

In general, I'm not a big sandwich kinda person. I really think it's because I don't really like sliced grocery store bread. I know, I sound like a big ole food snob. But I am, so I guess if the shoe fits.... We do have one bakery in town that makes excellent bread. I really need to make that a weekly stop and start buying their bread.

But I LOVE meatball subs. Absolutely love them. And I love that my Italian mother-in-law makes homemade meatballs and sauce and gives it to me on a regular basis. It's always on my list to make a whole mess of meatballs and keep them in the freezer for subs. But I never do it because my m.i.l.'s meatballs are awesome (she's 100% Italian!) and I get them often from her.

So I got a fresh batch from her yesterday. I just stuffed my bread, topped with mozzarella, and baked. I ate it with some local farm fresh veggies. Here's my sub:
