Roasted Beets for The Moose

I get a lot of beets in my CSA shares. I'm not a huge fan of them (except for beet chips!). Luckily, there is a guy in my house that loves them! The Moose really does love them. I have put them in his snack pack before and he picks the beets out and eats them first. It's messy, but he likes it.

But I didn't make beets in those posts. So here's how I do it. I have steamed the beets before (peel them then throw them in the steaming basket). Tonight I roasted them.


I rubbed them with olive oil. I really think last time I roasted them, I put them in the oven dry. Maybe?

Roast them at 400 for about an hour and a half (til they are soft). I ended up needing more room in the oven for dinner, so I transferred them to this little skillet. How cute do they look?!

After they cool enough to handle them, peel them. The peels rub off easily.


Put the beets in your food processor. I usually use an immersion blender for his food. But the beets can splatter and get messy, so I use the processor. I add lots of good fats to his food. I added olive oil.


I didn't have enough to mess with freezing. So I just put it in the fridge with some of the frozen food I prepared a few weeks ago. I split the beets in 3 containers and added 3 ice cubes of frozen food to each one.
