From Cardo's Farm Project: Swiss Chard, Onion, and Garlic
From Homestead: Sausage
Also: Corn, Jalapeño, Apple Cider Vinegar, Dry Mustard, Caraway Seeds
Core your cabbage. I quarter it and then cut the corner off. Thinly slice it. I used the food processor. I only used half the cabbage for this and saved the other half for later.
Olive oil and onion on med high heat. I sliced half and diced half of the onion. Honestly, because I wasn't paying attention. I would've sliced all of it, but whatever.
Chop up the chard. Add the stems to the onions. Wait on the greens.
Chop up the sausage and add to the onions..
Now a jalapeño.
That's chopped garlic.
Dry mustard and caraway seeds. And salt & pepper.
Add the Swiss chard and cabbage.
I love vinegar. I will use any vinegar any chance I can. I poured in probably about 1/4 cup.
Add a little water if needed. The cabbage sweats a bit so you don't need much.
Cover and simmer while you do the corn.
Shuck the corn. I had a big pot of boiling water. I always drop the corn in the boiling water and remove from heat immediately. In my opinion, corn shouldn't really be cooked, just heated up. Same thing with grilled, it doesn't need much.
I threw some bread in the oven to toast.
