Tamales

Let me go ahead and apologize if you were expecting a tamale recipe. I haven't attempted making tamales yet. One day......

I buy them from Homestead Farms. They are made with local ingredients (meat and veggies) and they are delicious! Tonight we had black bean tamales. Yummy.

I made pinto beans in the crockpot. I did the recipe in the link. But instead of a ham hock, I used the rind of prosciutto. When I got the prosciutto from the deli for lasagna rolls, it was at the very end. So the lady at the deli gave me the rind. I knew immediately it would go in some beans. Proscuitto is an Italian ham. Salty and yummy.

I also made my famous Mexican Rice.

And I made salsa.

I buy the tamales frozen. I steam them. I do not thaw them, I put in the steaming basket frozen.

Slice up an avocado.

Eat a yummy meal.

Of course The Moose was helping me cook the whole time. Here he is eating a teething biscuit.

Lots of good stuff to compost tonight!
