We were all crazy tonight and had breakfast for dinner! Wild, I tell you.
Once you see how easy it is to whip up pancakes, you'll never buy a pre-made mix. There's no need. You more than likely already have everything you need in your pantry and it takes just a few minutes.
For about 6 medium to large pancakes:
- 1.5 cup flour
- 1 tblsp sugar
- 1 tsp salt
- 2.75 tsp baking powder
- 1 beaten egg
- 1.5 cup milk
- 3 tblsp melted butter
That's the base mix. To that, add any fruit, nut, raisin, cinnamon, nutmeg, vanilla, nut butter (peanut, almond, etc.; and pb pancakes are awesome!), ricotta cheese (that's my absolute fav!), whatever you have works! You can't really mess it up. You can season & add fruit to your taste preference.
- 1/2 - 1 cup Fresh peaches, 1-2 tsp cinnamon, 1-2 tsp vanilla
- 1-2 tsp Minced fresh ginger, 1/2 - 1 cup raspberries
- 1-2 tbsp Honey, 1-2 tsp vanilla, 1/2 - 1 cup pears
- 1/2 cup Ricotta cheese and1/2 cup blueberries
Whisk in the milk, egg, and butter.
Here's the recipe with peaches. Chop 1 peach.
Add about a tsp each of cinnamon and vanilla.
Heat your skillet on medium heat. Add a couple slabs of butter.
Pour your batter on the skillet. About 1/2 cup per pancake. When you see bubbles in the center, it's ready to flip (you know, the little bubbles that look like boiling water. When you see one near the center, flip it.).
While the other side cooks, add some butter.
Repeat, butter, batter, flip.
Here's another version with pineapple, strawberries, and raspberries.
I added 1 tsp vanilla to the mix.
My husband wanted 1 raspberry pancake and 1 pineapple & strawberry pancake. So I divided the mix in half. Raspberries in 1 bowl, pineapple & strawberry in another.
I added honey to the raspberry because the raspberries were a little tart. About 1.5 tbsp honey.
