Super Easy Cobbler

I love this recipe. I love it because I always have everything on hand except the fruit. So when I'm at the farmer's market or grocery store and there are some great berries or other fruit at a great price, I know I can snag a lot of them and I have everything to make a quick, delicious cobbler.

In an 8" dish, add 4 tblsp butter. Melt the butter in the oven at 350.

Whisk together:
   3/4 c flour
   3/4 c sugar
   1/4 tsp salt
   1 tsp baking powder
It helps if you have a cute helper! That's The Moose.

Add 3/4 c milk. I used raw goat's milk.

Add any flavoring you want (if you want, not needed). I've used vanilla, cinnamon, nutmeg, ginger, or honey. Just pair it with the fruit you are using and be creative.

 Add the batter to the melted butter.


Top with your fruit of choice (berries, peaches, apples, pears, mix-n-match, whatever). You can also add nuts.


Top with a spoonful of sugar. I prefer raw sugar for this step because I like the crunch. But I didn't have any today.


Bake at 350 for 50-60 minutes.



And here it is with strawberries. I doubled the recipe because I took it to a potluck.

  3. I go to a small farm in Aubrey, TX. You can do a search here:
    http://www.realmilk.com/real-milk-finder/
    and goat milk (and cow milk) farms in your area show up. My farm is not on that list. I found it through a naturopathic pediatrician in my town. So give them in a call in your area and see if they have a list. You can also ask local health food stores (locally owned usually have more info on local farms) and see if they know of any.
