Grilled Chicken & Patty Pan Squash

Dinner was ah-maz-ing tonight! We've never grilled patty pan squash but we will definitely be doing it again. This couldn't have been easier.

The chicken is from Homestead Farms.
The veggies are all from Cardo's Farm Project (jalepenos, patty pans, onions).
The spices are all from The Cupboard.


Clean the chicken breasts (just cut off the fat).

Rub with olive oil and this spice mix.


We ended up adding another onion. I left the jalapenos whole and sliced the onion and squash.

Cut the little stem nubs from the squash.

Slice the onions and squash.

Rub with olive oil and the same spice mix.


I just mixed with my hands. Be sure to rub the jalapenos with the oil & spices as well.


Put the chicken on the grill.

Give the chicken about a 5 minute head start before you add the veggies.



Flip everything.






Our plan was to make enough of the grilled veggies to make veggie tacos in a couple days. But these were so good, I don't think they will last that long.
