Today was CSA pickup day from Cardo's Farm Project. And I already had all this in my fridge before picking up new vegetables:
So it was time for a big fridge purge. I still had some of last week's CSA, I picked up some veggies at the grocery store for meals that just never got made this week, and Cardo's gave me a big bag of more veggies last time I was at the farm. So I decided to make a big rice casserole.

I started by throwing some beet chips in the oven. I absolutely love these!
Here's what I used for the casserole.
Chop onions, Anaheim peppers, patty pan squash, and jalapenos.
Heat a couple tblsp of olive oil in an oven proof skillet on med-high.
Add your veggies to the oil. Add salt and pepper.
Cook your veggies for about 7 minutes.
I had about 1/4 cup barley. I added it just because it was in the pantry.
Add 1.5 cups wild rice.
For the liquid, I used the beet liquid from when I boiled beets for pickling. Add 3 cups (you can use broth or water).
Bring to a boil, cover, reduce to med-low. Simmer for 45 minutes.
Chop up your fixins. This is more stuff that was just in the fridge. Almonds, green onions, sunflower greens, tomatoes, and cilantro. I had ricotta cheese leftover from lasagna rolls (I was planning on making my awesome ricotta pancakes, but wasn't looking likely, so I used it here).
Wow! That's all that is left from that huge bounty I had in the beginning. Well, until Ryan brought home this week's CSA share. We grilled the patty pan squash.
While the rice was cooking, I made a snack pack for The Moose. Here's some squash in olive oil and some cilantro.
Here's his snack pack. Sunflower greens, squash, cucumbers.
I chopped some cucumbers and added a little white vinegar and salt.
There's my little helper.
Stir in the ricotta cheese.
Add the fixings.
Top with Parmesan.
Add in the oven (it's at 350 for the beet chips) for about 15 minutes.
Of course I made a leftover scramble out of that goodness.
Dinner is served. Beet chips, casserole, cucumbers, and pickled beets.
Here's tonight's compost. Sorry to Cardo's friends for composting so many sunnies. They gave me a ton a few days ago and they are already browning. So to the compost they go. Cardo's has a lot of big fans of their sunflower greens.
