You need:
- okra
- jars / cans (I'm crushing on these vintage Ball jars a little bit!)
- white vinegar
- pickling spice (I used a premade mix with cloves, mustard seeds, peppercorns, etc.)
- crushed red pepper
- salt
In a pot, 2 parts water and 1 part white vinegar. I used 4 cups water and 2 cups vinegar. To that I added 4 tblsp. salt. Bring to a boil and stir until the salt dissolves.
Fill your jars with the okra.
I didn't have enough jars, so a Tupperware had to do for part of it.
To each jar, add 1 tsp. pickling spice and 1 tsp crushed red pepper.
Pour the vinegar mix over the okra.
Store in the fridge overnight. That's it! You just pickled okra!
I bet these rock! I just made pickles for the first time too!
