Quick Pickled Okra

I had a bunch of okra from Cardo's Farm Project. And Ryan had recently expressed wanting a break from okra for the season. So I decided to pickle them! I'm new to pickling things. I don't do it often. And I don't really want to get into sealing cans. So I did a quick pickling process. You can find my pickled beets here.


You need:

  • okra
  • jars / cans (I'm crushing on these vintage Ball jars a little bit!)
  • white vinegar
  • pickling spice (I used  a premade mix with cloves, mustard seeds, peppercorns, etc.)
  • crushed red pepper
  • salt

In a pot, 2 parts water and 1 part white vinegar. I used 4 cups water and 2 cups vinegar. To that I added 4 tblsp. salt. Bring to a boil and stir until the salt dissolves.




Fill your jars with the okra.

 I didn't have enough jars, so a Tupperware had to do for part of it.

To each jar, add 1 tsp. pickling spice and 1 tsp crushed red pepper.



Pour the vinegar mix over the okra.

Store in the fridge overnight. That's it! You just pickled okra!

  2. Love Okra, but never had pickled ones. I can imagine how flavorful this must be. :-)
