There's nothing worse than soggy fries! I have a great secret for making crispy baked fries at home.
Slice your fries. I did thick wedges today. This same technique works for skinny cut fries as well (I've done that many times with this trick). You can use any potato you want. I'm using red / new potatoes today.
Here's my trick. I learned this when visiting a friend in Ireland, the land of potatoes. My friend is American, but her Irish boyfriend was a meat & potato guy. She had perfected making potatoes! To get your fries crispy, boil them for 8-10 minutes before baking them. This released the starch and the potato soaks up the water so they are moist on the inside. The outside gets crispy, but the inside stays soft and yummy.
After 8-10 minutes, drain them.
Coat them with olive oil and spices. I use this Cajun spice mix.
Toss. Bake at 450 for about 20 minutes. Stir occasionally. They will get nice and crisp on the outside.
I had company the night I made this and completely forgot to take pictures after they cooked (horrible blogger!). But here's the pan after everyone ate. Empty! That's a good sign. I made these with teriyaki shrimp & chicken wings.
