I made these with my spicy pork & cucumber Chinese meal. We had a house guest this last month and he always liked my cooking, but after this meal he said, "Please. Please. Open a restaurant." And it's true, that is one of my husband's favorites and the sweet potatoes went perfect with it.
These sauteed sweet potatoes only took about 15 minutes total. So a nice, quick alternative to baked or a casserole.

Slice your potatoes. Leave the peel on, it's good for you!
Chop about 2 tablespoons of fresh ginger. I usually keep fresh ginger around. It's so good for you! I use it for tons of stuff. I even put it in my pancake mix a few days ago.
Add about a teaspoon each of cinnamon and nutmeg.

When I have raisins, pecans, dates, or apples, I add them. Apples & sweet potatoes are really good together! I didn't have any of that on hand. Cook and stir for about 15 minutes. Quick & easy sweet potatoes!
