Ingredients:
- 4 medium sweet potatoes
- 4 tbsp olive oil
- 1 tbsp brown sugar
- 1.5 tsp salt
- 1-2 tsp chili powder (depending on how spicy you want them)
- 1.5 tsp cumin
- 1.5 tsp fresh minced ginger
- 1/4 - 1/2 tsp cayenne pepper (depending on how spicy you want them)
Cut your potatoes. You can cut them in large wedges or thin fries. I did thin fries (well, not the thinnest because the thinner you cut them, the longer it takes).
Mix everything else in a bowl. Toss with the potatoes. Add more olive oil if needed. You want them to be fully coated.
Here they are before they cooked. Bake at 425 for about 25 minutes. Once they are cooked and soft, give them another 7-10 minutes to crisp up. But keep an eye on them so they don't burn. Once they start crisping, it goes quickly.

We had ground beef tacos, black beans, and sweet-n-spicy sweet potato fries!
