Arugula Salad

It's arugula season here in Texas. And I have been getting a lot of arugula from my CSA. I have been taking an arugula salad with me for lunch everyday for almost 3 weeks. And it gets better everyday!

Today, I made my salad with arugula, cucumber, pecans, and a farm fresh boiled egg. My salad is a honey vinaigrette. It's equal parts honey and apple cider vinegar (my favorite dressing!). See me make the dressing in this post. That's a paleo banana nut muffin.


Earlier this week, I had a lot of fruit and berries. So I made my arugula salad with raspberries, mango, and apples. Man, that was yummy!

  1. My daughter, who wouldn't eat anything resembling a leaf while living in my home, came home from college and said "You know what you should try? Arugula..." and then she went on to explain to me what arugula was! I did my best not to laugh.. love it!
