Homemade Gnocchi with Caramelized Butternut Squash and Greens

Another meal with my homemade gnocchi! Gnocchi is an Italian potato dumpling. I love having these in the freezer. They take a little bit of prep, but they freeze wonderfully. I throw them in the water frozen and they only take a few minutes to cook. Easy dinner anytime. See me make them here.

I throw them in the boiling water still frozen. About 20-25 at a time, you don't want to overcrowd them. When they rise to the top, the are done. Just scoop them out and add them to your sauce.

This is a creamy marinara sauce.

This is braising greens, malabar spinach, and garlic. All of that is from my CSA share from Cardo's Farm Project. I chopped everything and sauteed in olive oil on med-high heat for about 7 minutes. I added salt and about a tablespoon of apple cider vinegar. I love sauteed green with vinegar. Any kind of vinegar (balsamic, apple cider, wine, rice, any kind is yummy).
